A Mid-summer Night’s Cooking Club

Friends, I’m about to drop some knowledge.


Here it comes….

School in July freaking blows.

With all the gorgeous weather we’ve been having, I find myself in constant conflict – it’s the stay-inside-studying-and-writing-endless-assignments vs. go-enjoy-summer-sit-on-patios-be-with-friends dilemma.

It’s been tough to strike a balance between the two, though I have tried:

The good news is the end is near…. In just two short weeks, my summer can FINALLY begin!

To keep from going stir-crazy cooped up in my apartment with only my Symptomatology textbooks to keep me company, I’ve been especially adept at making plans with friends – I need things to look forward to that will provide a little stress relief (others may call it procrastination… but I prefer to call it stress relief). 

Last Friday, that stress relief came in the form of a Cooking Club soiree with Ms. Sampson – we were long overdue!

We decided to take advantage of the sunshine and fire up the grill for our entrée – Beef Kabobs with bell peppers and onions:


We also cooked baby potatoes on the barbecue for a side dish:

And our salad was essentially summer in a bowl: Watermelon-Feta-Mint salad with toasted slivered almonds and arugula.

I LOVE Sampson's salad tongs...

The dressing was ridiculously simple: olive oil, balsamic vinegar and pepper. But be careful toasting the almonds… we got chatting as we sipped our chef’s juice (a.k.a white wine) and accidentally set off the smoke detector…

These recipes were so simple – before we knew it, we were sitting down to enjoy the finished product:

Then we retired to Sampson’s lovely backyard to bask in the summer evening.
